Onion, Feta, & Fig Tarts

I cannot say that this recipe is a traditional southern one, like most of my posts are. But maybe you will find it so delicious that it will be incorporated into your traditions or celebrations.

The idea behind this recipe is simple: using farm fresh, seasonal, sustainable, and local ingredients.  A tenant which can be said to be southern. Edna Lewis and so many other inspriational southern cooks just like here based their kitchens around this idea.

Truly, there is no better food that what is local to your area and what is in season.

It is finally fig season. It lasts a very short time, but if you are lucky enough (like I was) to source fresh figs you buy them all up. Unlike my husband, I was not lucky enough to grow up with a giant fig tree close by which produced an abundant amount of the unique fruit. My mom preferred her peach tree.

As for the feta, it is locally sourced from Bootleg Farm. Savannah’s beloved goat farm which produces fresh goat cheese. Read more about them Here.

A quick carmalization on some onions and I had a winning recipe. Buttery puff pastry sits at the base for these ultra savory and slightly sweet seasonal tarts.

You can eat these savory puff pastry tarts on their own or pair them with dinner. I will post later detailing what I did with these little beauties.

Onion, Feta, & Fig Tarts

Ingredients

  • 1 Box of Frozen Puff Pastry
  • 1 Pound of Fresh Figs
  • 1 Large Onion, peeled and thinly sliced.
  • 4 Ounces of Fresh Feta

Instructions

  1. Thaw the puff pastry for approximatley 30 minutes.
  2. While the puff pastry thaws, carmalize the onion.
  3. In a medium pan over medium-high heat, heat a tablespoon of olive oil.
  4. Once the oil is heated, put the sliced onion into the pan then add salt and pepper.
  5. Cook the onions, stirring occasionally, until caramlized. Set aside once cooked.
  6. Preheat the oven to 350 degrees Fahrenheit.
  7. Unfold the thawed puff pastry, and slice into 12 rectangles.
  8. Fold the edges of the puff pastry over then pinch the ends together. This will create a slight well in the center.
  9. Place the prepared pastry on two baking sheets.
  10. Fill each well with crumbled feta, then carmalized onions, and finding with a topping with two slices of fresh fig.
  11. Bake for approximatley 25 minutes, or until golden brown.

My Mama’s Meatloaf

My Mama’s Meatloaf

Every southerner has certain foods that are quintessential nostalgia. Growing up most southern mothers had a select few recipes that were rotated around their weekly dinners. My mom’s favorites were meatloaf, salmon patties, vegetable soup, roast in the crock pot–my favorite was her meatloaf.

Without hesitation she passed down the recipe. Recanting, a dash here and a pour there…without many measurements. I wrote down her recipe, which was scant on direction, and treasured it. She gave it to my at least five years ago, and it has taken just that long to get the recipe close to how she makes it. I still have yet to perfect that special something that comes only when a family member makes your food.

So yes this is my mother’s recipe but with a few liberties (or at least some tips I found useful along the way).

Meatloaf is a budget friendly meal. One pound of ground beef is relatively cheap at the grocery store and can be stretched by adding a few ingredients to make a hearty family supper. My mom always served hers with mashed potatoes and those little sweet green peas. I like to eat it leftover between two slices of toasted bread and a slathering of mayonnaise.

My Mama's Meatloaf

Prep Time: 10 minutes

Cook Time: 1 hour

Total Time: 1 hour, 10 minutes

Yield: 4-6 people

My Mama's Meatloaf

Ingredients

  • 1 Pound of Organic Ground Beef
  • 1 Package of Lipton Onion Soup Mix
  • 1 Large Egg
  • 6 Ritz Crackers, crushed into crumbs
  • 1 Slice of Stale Bread, cut into small cubes
  • 1/2 Onion, diced
  • Pinch of Salt and Pepper
  • 1 Small Can of Tomato Paste
  • 1 Tablespoon of Worcestershire
  • 1/2 Tablespoon of Brown Sugar

Instructions

  1. Preheat the oven to 350 degree Fahrenheit.
  2. In a mixing bowl combine the ground beef, egg, crackers, bread, Lipton onion soup mix, onion, 1/2 of the tomato paste, and salt and pepper.
  3. Mix together well, until everything looks combined.
  4. Place mixture into a small loaf pan and smooth the top. Lightly pack it down to make sure everything sticks together.
  5. Take the remaining tomato paste and mix in the brown sugar and worcestershire.
  6. Pour the tomato paste over the top of the meatloaf and spread evenly.
  7. Bake for one hour.
  8. Serve while still hot.

Cajun Meat Bread

Most southern food is bone sticking and hearty. A style that can be contributed to the economics of survival.

This recipe is not different. A full loaf of bread is stuffed with meats, cheeses, and vegetables before being baked off. The result is a spicy gooey filled bread that acts as the perfect appetizer for any party.

This is a dish that I have eaten since I was a little girl, even considering it is difficult to find many versions of it in cookbooks or online.

Everyone in my family loves it. It originates from my Aunt’s mother, Mary Joyce, who is Cajun through and through. It is one of those items that is always present at family gatherings – especially large ones. A fact that is evident by the size of the portions used in the original recipe that was given to me:

Personally, I do not cook for 80-100 people. I have a small family. So, the challenge with recreating this recipe was doing so in a way that would feed a smaller group. Lets say 10-12 people.

During my first test run of the condensed version of this recipe, I realized that the original recipe was missing some important instructions. A lack of instruction can easily be attributed to the fact that May Joyce has made this time and time again, so writing down all of the finite details was not something she needed to do. She has them all memorized.

There is a large difference in creole and cajun food. Creole food is the result of many nationalities who settled in New Orleans. In many creole recipes you will find inspiration from West African, Spanish, Haitian, French, and many other cultures.

Cajun food comes from the Acadian people and has a French influence. You will find Cajun food primarily outside of the city…where my family lives.

Comparing the two, although one cajun and one creole,  helped fill in some of the gaps.

I present my version of meat bread. Of course it will never be good as the original I ate growing up. It is not easy to include the love that is thrown into every family recipe that is made for you, instead of by you.

Cajun Meat Bread

Ingredients

  • 1 Pound of Ground Beef
  • 1 Pound of Andouille Sausage, cut into small squares
  • 1 Large Onion, peeled and diced
  • 1 Large Bell Pepper, seeded and diced
  • 2 Jalapeno Peppers, seeded and diced
  • 2 Cloves of Garlic, peeled and minced
  • 1 Tablespoon of Hot Sauce
  • 1 Teaspoon of Cajun Seasoning
  • 2 Small Cans of Mushrooms
  • 1 Cup of Shredded Cheddar Cheese
  • 1 Cup of Shredded Swiss Cheese
  • 1 Cup of Shredded Parmesan Cheese
  • 4 Balls or Loaves of Frozen French Bread Dough
  • Salt and Pepper to Taste

Instructions

  1. Start by removing the dough from the freezer to allow it to defrost.
  2. In a medium skillet, over medium heat, brown your ground beef. Breaking it up as it cooks.
  3. Once browned, remove the beef from the skillet and leave the grease in.
  4. In the leftover grease, sauté your onion, bell pepper, jalapenos, and sausage. Cook until everything is nicely browned. In the last two minutes of cooking, add in the garlic. Cook until the garlic is fragrant.
  5. Remove pan from the heat and set it aside to allow the mixture to cool.
  6. Preheat your oven to 350 degrees Fahrenheit.
  7. Once the mixture has cooled, stir in the ground beef, hot sauce, Cajun seasoning, drained mushrooms, and all of the cheese. Mix until well combined.
  8. Taste the mixture, and add salt and pepper as needed.
  9. Assemble the bread by placing one of the dough balls on a well floured surface. Roll out the dough until approximately 24"x12". The measurements are not exact, and have some wiggle room.
  10. Place 1/4 of your mixture into the center of the rolled out dough, and spread evenly. Leave a 1/2 inch border at the edges of the dough.
  11. Fold the corners over, then gently roll up the filling and dough. You will roll from one long edge to the other.
  12. Pinch the end of the roll into the dough to create a seal. If the dough does not seal, an egg wash will do it.
  13. Place the rolled loaf on a sheet pan, seam side down.
  14. Continue preparing the loafs until all of the loafs are filled and rolled.
  15. Bake for approximately 30 minutes, or until nicely golden brown on the outside.
  16. Some of the filling may ooze out, and that is okay.
  17. Slice and serve while warm.

There are often extremely difficult moments in life—days during which you feel as though you will not be okay. In the end, time will heal almost everything, but waiting seems impossible.

In those moments, food plays an important role for many. Personally, I gravitate towards homecooked meals that warm and ease my soul.

Two weeks ago I made the difficult decision to let go of my dog and best friend of 13 years. Although I know it was the correct decision to ease her suffering, it was the most difficult decision I have ever had to make. My friends and family really stepped up to be there for my husband and I. The showering of food (and booze if I am being honest) kept my home full while my heart was empty.

I cannot think of a more soul warming meal than roasted meat and a couple of sides. A meat and two or three (or four) is a staple southern meal. Growing up, dinner most nights included meatloaf, country fried steak, pot roast, salmon patties, or pork chops.

So when you go through something difficult you often lean towards bits of nostalgia—the good moments. A full plate of love-filled food is a plate full of nostalgia for me. A lot of my childhood consisted of sitting in the kitchen with my mother as she cooked me dishes from the heart.

Although she never roasted chicken like this, I think this recipe is easily one that you can add to your repertoire of food to cook and share with others. The preparation calls for an arrangement of vegetables at the bottom of your roast pan and a slathering of sweet sticky apricot preserves. The result is a juicy home roasted chicken with a slight Asian flare.

I am going to leave this recipe here because it is my hope that you share a homecooked, heart-filling meal with friends or family. Even if you are not going through your own battle, and just want a good meal, this dish will serve you well. Now get in the kitchen and make memories.

Apricot Glaze Roasted Chicken

Apricot Glaze Roasted Chicken

Ingredients

  • 1 Whole Chicken
  • 1 Bunch of Fresh Thyme
  • 1 Jar of Apricot Jam
  • 2 Yellow Onions, peeled and thinly sliced
  • 1 Lemon, halved
  • 6 Cloves of Garlic, peeled
  • 2 Cups of Chicken Broth, and more as needed
  • 1/3 Cup of Red Wine Vinegar
  • 1 Cup of Dried Apricots, sliced in half
  • 5 Tablespoons of Butter
  • Salt & Pepper
  • Olive Oil

Instructions

  1. Preheat your oven to 450 degrees Fahrenheit.
  2. Prepare the chicken by patting it dry with paper towels.
  3. Sprinkle salt and pepper into the cavity of the chicken then stuff the chicken. Add in one half of the lemon, half of the whole fresh thyme sprigs, two cloves of garlic, one half of one onion, and approximately six dried apricots.
  4. Coat the chicken in juice from the remaining lemon and in olive oil, rubbing them into the skin. Generously sprinkle the chicken with salt and pepper then tie the legs together with cooking twine.
  5. In the bottom of the roasting pan place the remaining onion, apricots, and thyme. Pour the chicken broth over the vegetables.
  6. Finely chop the remaining garlic, and sprinkle approximately 3 cloves worth over the chicken broth.
  7. Place the chicken on top of the vegetables in the roasting pan.
  8. Place the roasting pan on the middle rack in the oven to roast.
  9. You will initially roast the chicken for 15 minutes at 450 degrees before turning the temperature down.
  10. While the chicken initially roasts, prepare the glaze.
  11. In a small saucepan combine the jar of apricot preserves, butter, red wine vinegar, and remaining chopped garlic. Mix until everything is combined and season with salt and pepper to taste. Remove the glaze from the heat.
  12. After the initial fifteen minutes has passed, reduce the oven to 375 degrees Fahrenheit and baste your chicken with its first coating of apricot glaze.
  13. If the pan ever becomes dry, add in more chicken stock.
  14. Glaze the chicken every 15 minutes, cooking the chicken until the internal temperature reaches 165 degrees.
  15. Once the chicken reaches the desired temperature, remove it from the oven and allow it to rest before serving it.
  16. While the chicken rests, create a sauce to serve with it.
  17. Combine any drippings from the pan with the remaining glaze and heat in a saucepan over medium-high heat.
  18. Reduce the sauce until it reaches the desired thickness or is reduced to approximately half. Season the sauce with salt and pepper to taste

The Ultimate BLT

The Ultimate BLT

A bacon, lettuce, and tomato sandwich is one of those dishes that instantly triggers nostalgia for me. A good BLT is one of my mom’s favorite foods, which means so often growing up she would throw together a BLT for our supper.

Her recipe did not require special ingredients or fancy techniques, just a bit more care. She would quickly pan fry some bacon, which she usually had on hand in the fridge, slice some tomatoes from the garden, and slather toasted white bread with mayo. After watching her prepare countless sandwiches I realized what made her homemade version my favorite version. Aside from the addition of love, my mom seasoned every layer of her sandwich with salt and pepper.

First the mayo is lacquered on the bread then hit with a sprinkling of seasoning, the next layer is added and seasoned, and so on. As you can imagine, building a sandwich with tomato that has a sprinkling of salt and pepper far exceeds a sandwich with plain tomato.

And although I feel that you can never go wrong with classic BLT, I wanted to push the limits on what a BLT can be. With that in mind, I did not want to change the backbones of the sandwich by adding or using a bunch of random things. In the south people love to throw a fried green tomato onto a BLT in an attempt to heighten the recipe–I was not about to do that.

My approach is to amplify the already existing ingredients of a BLT. Add some garlic to the mayo, use better tomatoes, etcetera.

I use this Balsamic Onion Jam recipe to make the jam I use on the sandwich.

A few notes:

  1. Garlic confit can make you very sick if you do not cook it and store it properly. I recommend using it immediately and if you want to save it, freeze it.
  2. I purchased a loaf of homemade bread from a local baker. I recommend opting for a better bread than normal sliced bread from the grocery store.
  3. The true secret to making any BLT so much better is to salt and pepper every layer, even your smear of mayo.
  4. Finally, bake your bacon. This is a trick I learned during my short time as a line cook. Most restaurants place bacon in a single layer on a sheet pan and bake it instead of pan frying it. It keeps the kitchen cleaner (bacon grease does not spatter everywhere) and you are able to tend to other things in the kitchen while the bacon bakes.

An Ultimate BLT

Ingredients

  • 2 Heirloom Tomatoes
  • 1/2 Pound of Thick Sliced Bacon
  • 8 Slices of Country White Bread
  • Balsamic Onion Jam, link to recipe can be found above
  • 1 Head of Garlic
  • 1/2 Cup of Olive Oil
  • 1 Cup of Mayonise
  • 1 Head of Romaine Lettuce
  • Salt & Pepper

Instructions

  1. First, bake your bacon. Heat your oven to 350 degrees Fahrenheit. Arrange your bacon in a single layer on a sheet pan, or two if needed. Bake for approximatley 45 minutes, or until bacon is the texture that you like.
  2. While the bacon cooks, make the garlic confit. Peel the garlic cloves. In a small saucepan, combine your olive oil and peeled garlic.
  3. Heat oil over medium low heat. Cook garlic until soft, approximate 45 minutes to 1 hour.
  4. Once your bacon is cooked, remove it from the oven and let the bacon drain on paper towels.
  5. With your cooked garlic, make your garlic aioli. Finely chop 3 cloves of garlic. Combine the chopped garlic with the mayonnaise and a pinch of salt and pepper. Store the remaining cooked garlic for another use.
  6. Rinse off lettuce and tomatoes, then set aside to dry.
  7. Slice the Romain lettuce into bread size pieces. Slice the tomatoes.
  8. Toast your white bread.
  9. Smear each piece of toast with maynaoise, then salt and pepper the mayonnaise.
  10. Next place on your romaine, then a layer of bacon, and a layer of tomatoes. Salt and pepper your tomatoes.
  11. Spoon over your balsamic onion jam. Finish the sandwhich by topping it with a piece of bread with mayonnaise.

Butternut Squash & Lentil Curry

Colder weather means throwing something in the crockpot before work, letting it cook all day, and coming home to a bubbly, home cooked meal. The preceding is especially true when your book club decides to host their monthly meeting at your house.

I can think of no better way to feed a bunch of hungry ladies than to prepare something that is quick and easy.

If you are like me, crockpot cooking can be difficult because there are so few dishes or variations of dishes that you can make in a crockpot—soup, roast, or chili seem to be the go tos.

I tested out this recipe a few weeks ago on my husband, so when my book club meeting was scheduled for my house I thought the recipe would be perfect. The most work this recipe requires is steaming some jasmine rice for the side.

There is no added fat or meat, which results in a relatively healthy dinner. The base is made entirely of vegetables and a little bit of low sodium chicken stock. Low calorie cooking means more room for wine.

As the seasons change you can trade out the butternut squash for something more seasonal like mango or sweet potato. You literally throw everything into the crockpot the morning before your meal is planned, and let the lentils cook down with the vegetables until a thick creamy curry is created.

Just like you can switch out the vegetables that fill this curry, you can pick any of you favorite toppings to sprinkle over each finished bowl. I opted for cilantro and pickled onion, but the leftover seeds from the butter squash would have also been delicious roasted then peppered over the top.

Butternut Squash & Lentil Curry

Ingredients

  • 1 Butternut Squash, peeled, seeded, and cubed
  • 2 Cups of Red Lentils
  • 1 Pear, peeled and cubed
  • 3 Cups of Water
  • 1/2 of a White Onion, diced
  • 1 Cup of Vegetable Stock
  • 3 Tablespoons of Red Curry Paste
  • 2 Teaspoons of Garam Marsala
  • 2 Teaspoons Fresh Ginger, peeled and grated
  • 2 Teaspoons Turmeric
  • 1 Can of Coconut Milk

Instructions

  1. In a crockpot, combine all of your ingredients (except for the coconut milk) and mix together.
  2. Cook for 8 hours over low heat.
  3. Once finished cooking, pour in your coconut milk. Allow to cook for an additional five minutes to warm the milk.
  4. Serve finished curry over rice or noodles.
  5. Your choice in toppings is optional. Fresh cilantro, pickled onion, roasted squash seeds are great options.

For us in the low country, summer’s end is marked by the beginning of hurricane season. It is a period of months that I absolutely dread, especially considering I did not grow up here. Where I am from, our only worry was the occasional lighting storm or tornado.

With summer marking its end, last week I dug up my summer garden to replant my winter one. Now I am not so certain my tiny little plants are going to make it through the impending storms of hurricane Florence that everyone on the east coast is tracking so closely. Even if Savannah does not get hit directly this week, I can assure you that a gust of torrential rain and wind will likely wipe out my tiny plants.

Part of summer ending and fall/winter replanting means using up the last bit of fruit from the garden. For most southerners this results in canning and saving for the winter. When canning comes around, I tend to lean towards jams and pickles.

Making a jam doesn’t only have to be reserved for fruit or sweet items. I often make onion, bacon, or tomato jam to keep and pair with a hefty cheese plate or put out for a gathering.

The basics of jam are easy, unlike jelly which often requires the addition of pectin or gelatin. To make a jam I employ a few standard techniques, cooking down the star ingredient with a liquid and sugar until it becomes sticky and reduced.

For this jam recipe I use two types of onion, Vidalia and red, to achieve a well rounded flavor. The addition of balsamic vinegar cuts through the sweetness and adds a deep savory flavor.

You can save the recipe by canning the finished jam or store it in the fridge for up to a week.

Ingredients

  • 2 Vidalia Onions, peeled and sliced
  • 2 Red Onions, peeled and sliced
  • 1 Cup of Sugar
  • 1 Cup of Balsamic Vinegar
  • 1/2 Teaspoon of Thyme
  • 1/2 Teaspoon of Salt

Instructions

  1. In a medium saucepan with olive oil, sauté your onion over medium heat until translucent and lightly caramelized.
  2. Transfer onions to a medium saucepan, and add in your remaining ingredients. Stir until combined.
  3. Cook the mixture over medium heat until simmering.
  4. Reduce the heat to medium-low, then cook for an additional forty-five minutes to an hour, or until reduced in half.
  5. Store in fridge in an airtight container for up to a week, or can in jars which can be kept for up to six months in the pantry.

Jerusalem Bagels with Burnt Honey Cream Cheese

Savory, nutty homemade Jerusalem bagels and a side of decadent, condensed burnt honey creamed cheese–it’s a baking recipe that I know everyone will love.

I am super ecstatic about this post and sharing a recipe that I will be adding to my list of rotating go-tos. As someone who constantly cooks, I can state with confidence, on behalf of all of the home cooks out there, it is rare that you find a recipe that is both easy and a show stopper.

The recipe makes Jerusalem bagels, which are different from a normal bagel due to the lack of boiling. Even though the bagels are not boiled, the flavor is still amazing. They taste reminiscent of a bagel/pretzel hybrid. By forgoing the step of boiling, you are saving on time and work, hence making the process a lot easier.

I recommend you eat these warm out of the oven or warm them up if you are eating them at a later time. They go with just about anything, hummus, cream cheese, cheese, etc.

I wanted something sweet yet unique, so spruced up some cream cheese by making burnt honey. The process of “burning” honey is simply caramelizing it a bit, to give it a deeper more condensed flavor. A quick warning–once you eat honey like this you will never go back.

As for the topping, I glazed them with honey to add a bit of sweetness and keep with the honey theme and a sprinkling of sesame seeds to add nuttiness. The recipe is extremely versatile, serving as a great base for any topping or mix-in. In the future, I will be posting many more versions of Jerusalem Bagels.

Jerusalem Bagels with Burnt Honey Cream Cheese

Jerusalem Bagels with Burnt Honey Cream Cheese

Ingredients

  • Bagel Ingredients:
  • 1 Tablespoon of Quick Acting Yeast
  • 1 1/2 Cups of Milk, warm but not higher than 100 degrees Fahrenheit
  • 4 1/2 Cups of All Purpose Flour
  • 2 Teaspoons of Sugar
  • 2 Teaspoons of Salt
  • 1 Teaspoon of Baking Powder
  • Olive Oil
  • 4 Tablespoons of Honey
  • Sesame Seeds for Topping
  • Burnt Honey Cream Cheese Ingredients:
  • 1 Block of Creamed Cheese, softened
  • 1/2 Cup of Honey

Instructions

  1. First make your burnt honey creamed cheese. Pour your honey into a small saucepan and heat over medium heat.
  2. Cook the honey for about 10 minutes, until it turns a light amber color and thickens slightly. The honey will foam as it cooks, that is okay.
  3. Once reduced, set aside to let the honey cool completely.
  4. In a small mixing bowl, combine your burnt honey and creamed cheese. Stir to desired combination, swirled or fully mixed.
  5. Place mixture in a sealable container and place in the fridge until ready to serve.
  6. Begin making your bagels by blooming your yeast in the warm milk, allowing to sit for about 5 minutes.
  7. In a stand mixer or large mixing bowl, mix together your flour, baking powders, sugar.
  8. Pour in your bloomed yeast and milk, then mix until combined. Lastly mix in your salt as to not kill the yeast.
  9. Add your dough hook to your stand mixer, and kneed the mixture on medium for five minutes. A soft pliable dough should form. If the dough looks dry, add more milk as needed.
  10. After the dough has been kneaded, remove the dough from the mixer and rub on a light amount of olive oil.
  11. Place coated dough in a large oiled bowl, cover tightly. Allow to rise for at least one hour, or until it has doubled in size.
  12. Once the dough has risen, preheat your oven to 450 degrees Fahrenheit. Prepare two sheet pans by lining them with slip mats or greased parchment paper.
  13. Gently remove the dough from the bowl, and section the dough into six even pieces.
  14. On a lightly floured surface, roll each section of dough into a log that is about 12 inches long. Attach the ends together to create an oblong circle. Gently place on the prepared sheet pan.
  15. After the bagels are prepared, allow them to rest for 15 minutes.
  16. Before baking, slather each bagel with honey and a sprinkling of sesame seeds.
  17. Bake for 10 - 15 minutes, or until a golden color and cooked through.
  18. Serve with burnt honey creamed cheese.

For this post, you get a very short and simple recipe. This recipe that I love and go back to time and time again, so just because it is easy does not mean it is not delicious. I also wanted to share with you a savory recipe, which I feel as though I so rarely do.

For many southerners boiled green peanuts are one of those snacks that we turn to time and time again. Stop in almost any gas station below the mason Dixon, and you can grab a cup of hot (maybe not so fresh) boiled peanuts. On the short drive to Tybee Island from Savannah, there is a stop to get fresh steaming hot boiled peanuts, and let me tell you there is nothing better than sitting on the beach eating salty peanuts with an ice cold Coke. I even served boiled peanuts as a passed hors d’oeuvre at my wedding alongside pimento cheese sandwiches.

Often times our eyes are much bigger than our stomach, and we buy a bag that is too large to consume. Instead of letting the extra peanuts go to waste, I use them up replacing garbanzo beans with boiled peanuts in my hummus recipe. The result is something salty and delicious, perfect for scooping up with a toasted triangle of white bread.

I use this recipe time and time again because it is one of those dishes that your friends rave about when you bring it to a party or tailgate. When I am feeling extra fancy, and southern, I love to put a jar of the hummus on a platter next to homemade pimento cheese, bacon jam, and my pickled vegetables.

For those of you that have never tried boiled peanuts, I hope this recipe pushes you to step out of your comfort zone, or at a minimum inspires you to create something totally new from an everyday classic recipe.
I included red pepper in the recipe, which is optional. If you are like me and like a little kick, then add it. The hummus is just as delicious without it, so use however much you like.

Boiled Peanut Hummus

Boiled Peanut Hummus

Ingredients

  • 4 Cups of Shelled Boiled Peanuts
  • 2 Cloves of Garlic, peeled
  • 1 Teaspoon of Salt
  • 1/2 Cup of Tahini
  • 1/2 Cup of Olive Oil, plus more as needed
  • 1/2 Teaspoon of Red Pepper in the powered form, optional

Instructions

  1. In a food processor, combine your shelled peanuts, garlic cloves, salt, tahini, olive oil, and red pepper if you like.
  2. Blend on medium until everything is combined and broken up. The consistency will not be totally smooth.
  3. If the mixture is too thick, add as much olive oil as necessary to get the hummus to the consistency you like.
  4. Store in a sealable container until ready to serve.
  5. Serve with vegetables of your choice, or toasted slices of white bread.

Korean Cured Egg Yolks

When it comes to cooking, I am a believer in using every ingredient to the max. In my posts, I have often spoken of the difficulties in cooking for a home of two — especially being a Southerner with a large family who is used to eating large meals. The concepts of a meat and three and eating everything on your plate was instilled in me at a very young age.

Another southern part of me loves to keep a cake on the counter at all times, and my husband’s mother is the same way. With all of the baking I do, I so often have leftover egg yolks and nothing to do with them. For most, we think nothing of tossing the egg yolk into the sink after separating eggs for a mix. To be honest, I have done the same countless times, often without even blinking. Thinking back on it now, it is kind of silly to waste such a delicious fat-filled staple. Egg yolks are so versatile; they’re essentially nature’s mayonnaise. Personally I feel as though a runny egg can be eaten atop of almost any dish, taking a dish from normal to out of this world. So why would we throw away something so delicious?

All of that changes now. After reading up a bit on salt curing, a cooking technique that predates most, I thought why not apply this technique to my egg yolks. If you don’t know what curing is, it is a way to preserve food by applying salt.

Cured egg yolks, often time duck yolks, are popular with traditional Japanese cuisine.

The result of curing the yolk is a bit strange. The finished product is not runny, instead the texture of the yolk is that of a soft gummy. Many people treat the yolk as a soft cheese, grating it over a finished dish. The flavor is like a creamy umami salt bomb.

For my recipe, I wanted to expand on the idea of Asian cuisine, adding Korean chili powder known as Gochugaru. You can find it in any local asian grocery store.

As for the color of the yolks pictured, they are much more orange than those cured in a traditional salt cure. The chili powder adds a vibrant orange tint to the yolks.

Do not be scared of curing something. The process itself is rather foolproof. Simply tightly cover and let sit untouched in the fridge for one week.

Korean Cured Egg Yolks

Cuisine: Asian

Yield: 6

Korean Cured Egg Yolks

Ingredients

  • 6 Egg Yolks
  • 3 Cups of Salt
  • 3 Tablespoons of Korean Chili Powder
  • 1 Tablespoon of Garlic Powder
  • 1 Tablespoon of Sugar

Instructions

  1. In a mixing bowl combine together salt, pepper, garlic, and sugar.
  2. In a sealable container (at least 8x8), pour 2/3 of the mixture into an even layer on the bottom of the container.
  3. Create six indentions in the mixture, large enough to nest an egg yolk.
  4. Gently place each egg yolk into each indention, being careful not to break.
  5. Gently pour, preferable with your fingers, the remaining 1/3 salt mixture over each egg yolk. Be sure each egg yolk is fully covered.
  6. Tightly cover and store in the fridge for one week.
  7. After one week, remove from the fridge.
  8. Gently rinse each yolk with water.
  9. Grate onto anything you want.
